I am an electronics designer at Infinium and your web question has been passed to me to see if I can help.
We have a digital output fader which we can configure for you to produce a Midi data rate, binary output at TTL levels. It will give you a level between 0 at one end, and 127 at the other end. The data rate is 31,250 baud.
The output from the fader is TTL compatible voltage, so if you connected this to a Midi driver then you would have Midi directly. We can also modify the output to cover 8 bits if you require.
The fader runs from 3.3V so you would need to add a voltage regulator if your power supply is +5V.
If it is easier for you to have a variable potentiometer to interface to your equipment then we also have a version of the fader which has a 100k full scale resistor type output that can be connected directly to a 5V source. I would think this will work with your analogue input, but if you need the resistance to be 10K then we can configure the fader that way for you with an additional resistor.
I am happy to help with circuit diagrams if this is useful to you. Does this information answer your question?
If you would like to use one of these solutions then let me know which one and I will find the part number for you to use for an order.
